Tender leaved basil ready for your pesto!

Here’s the recipe I use.  

  • 4 cups basil
  • 1/4 cup olive oil ( we have a good price on bulk organic extra virgin olive oil)
  • 4 cloves garlic
  • 1/4 cup grated white cheese

  • 1/4 cup nuts ( I’ve used pine nuts, almond, walnuts and even sunflower seeds)

  • 1/4 -1/2 tsp. salt

  1. Throw in blender and chop until smooth.  I stop the blender and stir it down several times.
  2. Blend in remaining cheese and nuts if you want a smooth texture or hand stir in for more textural contrast. 
  3. Store in a glass jar in the fridge for up to 6 months (when I’m planning on storing it I omit the cheese and nuts)
  4. Pour a small layer of olive oil on top and put in the fridge or freezer.  Leave plenty of space on top if freezing.
